Tabasco's Avery Island Home

Tabasco hot sauce has been made on Avery Island, Louisiana by the McIlhenny family since 1868. Edmund McIlhenny, a banker turned amateur gardener, developed the recipe using capsicum peppers, vinegar, and salt from the island's salt mines. The island is not technically an island but a salt dome that rises above the surrounding marshland, sitting atop one of the largest salt deposits in the Western Hemisphere. McIlhenny patented his sauce in 1870, and the family has retained full ownership and production on the same property for over 150 years.
