Red or Green? The State Question
New Mexico's official state question is Red or Green, referring to the choice of red or green chile sauce that accompanies virtually every traditional New Mexican dish. If you cannot decide, the answer Christmas means you want both. The New Mexico chile pepper, particularly the Hatch green chile grown in the Hatch Valley, is treated as a distinct and protected product with passionate devotees across the Southwest. Each fall, roasters set up outside grocery stores and gas stations across the state to fire-roast fresh chiles, and the smell of roasting Hatch chiles is considered the defining sensory experience of a New Mexico autumn.
