North Carolina produces more sweet potatoes than any other state in the United States, growing roughly half the nation's entire supply. The crop has been grown in eastern North Carolina for generations and thrives in the region's sandy coastal plain soil and long warm seasons. The sweet potato is one of the most nutritionally dense vegetables that can be grown, and North Carolina growers ship sweet potatoes to all 50 states and dozens of foreign countries. The state legislature officially designated the sweet potato as North Carolina's official state vegetable in 1995.
