Half of America's Maple Syrup
Vermont produces approximately 50% of all maple syrup made in the United States, more than any other state, and about 5% of global production. Maple syrup production requires a very specific climate: cold nights below freezing followed by warm days above freezing in late winter and early spring cause the sap in sugar maple trees to flow. Vermont's combination of dense sugar maple forests and reliable freeze-thaw cycles makes it nearly ideal. It takes approximately 40 gallons of maple sap, boiled down in a sugarhouse, to produce one gallon of syrup.
